description This article presents some of the findings as part of the applied research project for the development of Culinary tourist routes in and around Bucaramanga. By applying the ethnographic method one can appreciate existing relationships and values between communities, families and individuals through reproduction, consumption and safeguarding practices, habits, beliefs and culinary perceptions. In addition, it seeks not to lose the link with the rural world , the permanence of an ancient soup preparation as chorotas recognized. Finally, it is proposed joint tourism and cultural features with aspects of the metropolitan region.
